Boiled Tapioca/Kappa Puzhungiyathu

 

Ingredients

 

For boiled Tapioca 

 

  • Tapioca - 1 large

  • salt 

  • water

     

For Red chilly Chilly dip

 

  • Red chilly - 4
  • Shallots - 1/2 cup

  • salt

  • oil

 

Method

 

For boiled Tapioca

 

  • Peel the tapioca and cut into pieces.Wash thoroughly until  water runs clear
  • In a large pan ,bring water to boil add tapioca and salt.Cook for about 15- 20- min or until it is tender.
  • Drain and serve it with chutney

For Red chilly dip

 

  • Heat a pan with oil dd red chilly and shallots until brown on low medium flame
  • Allow to cool and grind the roasted chilly and shallots , without adding water
  • Transfer the mixture in a bowl and add salt and oil
  • serve it with boiled tapioca

 

 

Nadan chicken curry

Nadan chicken curry


Ingredients

 

  •   Chicken - 1/2 kg

  • Shallots - 1 cup

  • Garlic - 8- 10 cloves

  • Ginger - 1 piece

  • Tomato - 1 big

  • Green chilly - 2

  • Chilly powder - 1/2 tblspn

  • Corriander powder - 2 tblspn

  • Turmeric powder - 1/4 tspn

  • Garam masala - 1 tblspn

  • Black pepper powder - 1tspn

  • oil

  • salt

  • water

 

To temper 

  •  Mustrd seeds - 1 tspn

  • Green chilly - 1

  • Red chilly - 2

  • curry leaves

  • oil

 

 Method


  • Wash and clean the chicken
  • Grind the ginger and garlic together to make a fine paste
  • Heat the clay pot with oil.

  • Add shallots,green chilly, Ginger garlic paste ,saute it wel until it turn light brown colour.

  • Add all powder and stir it well until the powder mix with shallots.

  • Add tomato and saute it well.Add some water and salt ,stir it well.
  • Add  chicken pieces and stir it well.
  • Cover the clay pot with the lid and allow to cook for  15 min.
  • Heat  pan with oil.
  • Let the mustard  to splutter.
  •  Add green chilly, redchilly and curry leaves.
  • Pour it into the chicken curry , and off the flame
  • The nadan kozhi curry is ready ,serve it with rice, chappathi, paratho

Idiyappam/Nool Puttu

Idiyappam/Nool Puttu

 

Ingredients

  • Roasted rice flour - 1.5 cups
  • Boiling water - 1¼ - 1½ cups
  • Grated coconut - ½ - ¾ cup
  • Salt

Method


  • Combine salt and roasted rice flour. 
  • Add boiling water gradually and using a wooden spatula mix the dough. 
  • Add water till the dough comes together. Using your hands (be careful the dough can be very hot), knead together until you get a smooth and soft dough.
  •  The dough should not be too tight and it should not be sticky also. Cover the dough with a wet cloth.
  • Grease the top and bottom of idli moulds (refer notes). Sprinkle the grated coconut on these moulds.
  • Take small portions of dough and press each portion through Idiyappam mould or Idiyappam presser onto greased idli moulds or banana leaves.

  • Once the water starts boiling in the steamer, place the idli moulds and steam for 7-9 mins on medium - high flame.
  •   Keep the steamed closed for a min or two. Transfer the cooked Idiyappam to a serving plate. 
  •  Serve hot with any curry of your choice.

Notes


  • The quality of rice flour is key to make soft Idiyappams. Make sure you get the best quality roasted rice flour.
  • Make sure that you keep the dough covered with a wet cloth all the time, it prevents the dough from drying out. If the dough is too tight, it would be difficult to press it.

  • I usually put grated coconut as a stuffing between the Idiyappams. You can also add some sugar to coconut and use that. Make sure that you grease the bottom of the idli moulds as well, it will prevent the Idiyappam from sticking if multiple idli moulds are used at a time. You can grease the idli moulds with coconut or any vegetable oil.
  • Make sure you use the dame flame throughout while steaming. I usually cook the idiyappams for 8 mins. 
  •  You can make this in advance and store in an airtight container in fridge for 2-3 days. Drizzle some water on refrigerated Indiyappam and microwave for 30-40 seconds before serving it.

  • Atta - 2 cup

  • Grated Coconut - 1/2 cup

  • water 

  • salt

Method

Ingredients

  • Bread slices - as required 
  • Besan flour - 1 cup
  • Chilli powder - 1/2 to 1 tspn
  • Asafoetida powder - a pinch
  • Cooking soda - a generous pinch
  • Salt - to taste
  • Oil - for deep fry
  • Water - as required to make batter

Method

 

  • Heat oil in a kadai.
  • In a bowl take besan flour,chilli powder, asafoetida powder,salt and mix well then add water little by little to make thick batter like idli batter consistency.
  • Then add cooking soda to it and mix well.
  • If want you can add food colour to the batter at this stage.
  • Cut the bread slice diagonally in to two halves and dip it in the batter and deep fry it in oil.
  • Cook till it turns golden brown on both sides and take it out.
  • Serve the tasty bread bhaji along with coconut, green chutney or tomato ketchup.

Ingredients


  • Boiled eggs - 4
  • Ginger,Garlic ,green chilly paste -  3/4tbspn
  • Onion(thinly sliced) - 2
  • Tomato(sliced) - 1
  • Chilly powder - 2 tspn
  • Corriander powder - 1 tspn
  • Garam Masala - 3/4 tspn
  • Turmeric powder - 1/4 tspn
  • salt
  • oil

 

To temper

  • Mustard - 1/4 tspn

  • Red chilly - 1

  • Curry leaves

 

Method 

  •  Boil the egg and deshell,keep aside.

  • Heat the oil in a pan add mustard, chilly, curry leaves

  • Add onion ,salt , curry leaves and ginger,galic,green chilly paste.

  • Saute it well till it turn to golden brown

  • Add tomato,saute it well till it mix with onion.

  • Now add chilly powder, corriander powder, turmeric powder, garam masala and stir it well.

  • Add little water for mix the powder with onion.

  • Now add egg, saute it well.

  • Add 1 cup of water, Boil it .

  • Switch off the stove and serve it with rice,chappathi, pulao

Soyabean Granules are rich source of fiber and protein along with carbohydrates.While there are many ways to gorge onto its protein the best one use to soya which are protein rich,easy to cook and has a great taste.In this soya pulao recipe,nutrious soya granule and rice are mix with ghee vegetables and spices.
 

Ingredients

  •  Rice - 1 1/2 cup
  • Cumin seed(jeera) - 1 tspn
  • Cardamom - 4
  • Clove -3
  • Black peppercorns - 4
  • Cinnamon - a small piece
  • Bay leaf - 1
  • Boiling water - 3 cups
  • Soy chunks - 1 cup
  • Chopped Carrots - 1/4 cup
  • Green peas - 1/4 cup
  • Onion - 1 big
  • Ginger, garlic paste - 2 tspn
  • Green chilly - 3
  • Turmeric poder - 1/2 tspn
  • Corriander powder - 11/2 tspn 
  • Garam masala - 1/2 tspn
  • salt
  • ghee

Method  

 

  • Wash and soak basmati rice in water for 10-20 min

  • Soak the soya chunks in hot water for half an hour squeeze out the water completely 

  • Marinate the soya with turmeric powder,coriander powder,garam masala. 

  • Heat a pan with ghee fry both cashew and kismiss. Drain it and keep aside

  •  To the same pan add cumin seed,  balck pepper cones ,onion and satute it well.When it turns golden brown add ginger, garlic and green chilly paste. cook it for 2-3 min

  • Add chopped carrot and green peas and satute for 2-3 min then keep aside

  • Heat a pressure cooker with ghee. Fry cinnamon,bay leaf,cardomom and clove

  • Add drained rice ,veggies, marinated soya and salt mix it well

  • Add in water and pressure cook it for one whisle in high flame

  • Let the pressure subsides.Now open the cooker and mix the rice gently

  • Soya bean pulao with vegetable is ready.Tranfer it into serving bowl

                              I Still remember the day my daughter was born.Apart from the beautiful feeling  of being privileged to have my bungle of love in my own arms.It was my baby's tiny little hands,her beautiful eyes,her cute nose.her rosy lips and the softest touch she had that made me realize that however much we must have read or hear before the baby arrives,this wonderfully miraculous experience of having your baby's first touch is just beyond imaginations.You feel it only when you experience it .I brought her cheek close to mine making a gentle touch.I wondered "she is soft" but the next movement a question surrounded my thoughts, "Will be able to keep her skin as smooth and soft as it is today?"                       Even we are using so thin soft cloth to run child's body.If baby is happy, then the parents will defiantly happy. Many of us seen when the mosquito bites baby then what is happens baby's skin? The sin color becomes dark red. From this only we can find out how much soft baby's skin is.

                          In all the new born babies the skin is very soft and delicate, tiny pink pumps appears on the baby's faces and chest, one should not squeeze the pimples. It may lead to scarring and rashes on the skin. In time being they may disappear  otherwise we have to consult the pediatrician.
    

Some tips to keep baby's skin soft,smooth and safe


1.Oil massage


                   It's traditional to massage a baby before his bath in many families, oil are preferred over creams and lotions for this purpose.There are some things  you should keep in mind when massaging your baby.Some experts recommend using a vegetable oil or plant oil. They absorb quickly and digest easily if your baby sucks his oil smeared  thumb. If  you're using vegetable oil, cold pressed, unrefined oils are best suited for massage.
                           Don't put any oil in your baby's nose navel or ears. Although it is a common practice , putting oil in these places could lead to infections.Use gentle, upward strokes. When massaging your baby, despite popular belief, there is no proof to suggest applying pressure on your baby's head will make it round.





2. Use Diaphers


                 Be careful to selct the diapher.Use quality diapher that are skin friendly and dermatologically tested for your baby's sensitive skin. Diaphers play a very important role in a baby's health and well being. Make sure that the diapher you are using for your baby is softest. Ingredients
    • Maida - 1 cup
    • Powdered Sugar -3/4 
    • Ghee - 1 tblspn
    • Baking Soda - 1/2 tspn
